Cleavers are easily recognizable by their large rectangular blades and sturdy, compact handles. They come in a range of blade thicknesses and weights: thinner, lighter cleavers excel at fine slicing, while thicker, heavier ones are ideal for medium-duty butchery tasks like breaking down poultry or splitting fish heads. Despite these differences, all cleavers are versatile general-purpose kitchen knives capable of slicing, chopping, mincing, scraping, and even crushing ingredients such as garlic cloves or lemongrass.
